There are also doubts over two other key players in leading scorer Peter Odemwingie and winger Jerome Thomas for a match the Gunners need to win to secure a Champions League spot.
Brunt has had his tonsils removed now as he is a potential candidate for the Great Britain Olympic squad, and wants to ensure he will be available if required by Stuart Pearce.
Albion number two Keith Downing confirmed: "We know Chris might be considered for the Great Britain team.
"He has been stop-start with them (the tonsils) so the decision was taken to (remove them) now and it will give someone else the opportunity to play on Sunday."
Odemwingie (leg) and Thomas (illness) are also battling to be fit to face Arsene Wenger's side.
Downing said: "Peter is doing rehab to try and get back before the weekend while Jerome has been out for the past couple of days with a virus."
Downing is still waiting to find out whether he will remain part of Albion's plans after Hodgson's departure.
He said: "I've not spoken personally to anyone. We will review it this summer. I'm a realist."
